【9-Step Pearl Sauce】
Legend has it that the imperial chefs created this Imperial 9-Step Pearl Sauce to satisfy the gourmet palate of the Empress Dowager Cixi. The sauce is prepared with pearl powder and abalone, both of which are Cixi’s favorites, with health and beauty-promoting effects, ideal for seasoning all kinds of cuisine.
◎Recommended Dish – Stir Fried Beef with 9-Step Pearl Sauce:
1.Create a sauce by mixing eggs, corn starch, soy sauce and sesame oil. Then marinate the beef in the sauce for 10 minutes.
2.Heat the marinated beef until it is medium well, remove from the pan.
3.Stir fry red pepper, yellow pepper, garlic cloves and scallions with an appropriate amount of 9-Step Pearl Sauce, then add the beef in to stir fry until the beef is well done.

【Fragrant X.O. Sauce】Using the special local ingredients from Peng Hu, prepared with a complicated set of techniques, combining the seafood’s sweet taste and the aromas from the spices, this mildly spicy and aromatic sauce is Li Yuan’s secret weapon for preparing seafood dishes.
◎Recommended Dish – Stir Fried Clams with Fragrant X.O. Sauce:
1.Clean the clams and wait till the sand have all been released. Set aside for later.
2.Stir fry garlic and red chili pepper with oil, then put the clams in to stir fry for about 30 seconds. Then, add some rice wine and cover the pan for about 1 minute to steam it.
3.Add the Fragrant X.O. Sauce, soy sauce, white vinegar and sesame oil for seasoning.

【Tiger Hot Pepper Sauce】This is an indispensable sauce among the old school Beijingers. Prepared by stir frying in small batches, the aromas are drawn out from the extremely spicy hot pepper, garlic, fermented soy beans and Puli’s mushrooms. Then, it is seasoned with millet wine and vinegar, resulting in an extremely spicy and fragrant sauce.
◎Recommended Dish – Noodle with Tiger Hot Pepper Sauce:
Bring the water to boil, cook the noodles until it’s done, place the Tiger Hot Pepper Sauce, chopped scallions, salt or soy sauce into a bowl, mix well with noodle, and it is ready to be served.
